Is That Black Licorice I Tastes?
In an effort to improve the quality and overall output of their specialty coffee lots, this wet hulled offering was created by a group of 325 small farms. Each farm is located between 4000 and 4900 feet above sea level and averages only one to three hectares.  The coffee farmers from the Lake Toba region of Sumatra, Indonesia have been working together for the past five years to continually improve this lot and bring it to market with the specialty grading we feel it deserves.

Roaster’s Notes:
This month's coffee followed a similar roasting profile to those of Mandheling or Gayo Mountain, Indonesia. There is something about these Indonesian offerings that can make them challenging to roast. This month's offering prefers a lower initial charge temperature on the roaster followed by a longer smooth roast time. The coffee has a lot of energy as it is being roasted and can go from medium to dark and uneven extremally quickly if too much heat being applied or your air flow isn't just right.  To get the optimal flavour profile and still create an everyday cup of coffee, we chose to roast to a full medium level this month.
