This Month's Coffee Selection
October's coffee puts the "Java" in "Mocha Java"...Literally! Back in December of 2022 you may recall we Cupped a Yemen Zamarrud as well as a Yemen Matari, the "Mocha" half of "Mocha Java". If you revisit that blog post you'll find a brief overview and history of Yemen's importance in coffee history. You'll also find this fun fact: "While you may find coffee shops touting Mocha Java as a chocolate coffee concoction, authentic Mocha Java is a blend of coffee from Yemen and Java, Indonesia."

The Kayumas (meaning Golden Wood) Estate, is located in the northeast of the Bondowoso province, on the Indonesian island of Java. In the 19th Century, coffee leaf rust destroyed most of the low altitude coffee plants in the region. As a result the local farmers moved their production to higher altitudes. Fortunately for us, these higher plateaus are composed of volcanic soil and ideal growing conditions. The Kayumas coffee is handpicked and fully washed presenting as a clean and beautifully acidic cup, when compared with "earthier" Indonesian and Bali origins.

Roaster’s Notes:
This month's coffee was roasted to a full medium level as the flavours we tend to find in our Indonesian coffees present well in this profile. It's also just how we like our coffee to taste. As we've motioned with past Indonesian origins, there is a fine line between where medium quickly into a dark or uneven roast.

While cupping look for a Jammy taste with hints of Cedar (like the tree) note followed by …wait a minute, if you want cupping notes Go Cup Yourself!
