This Month's Coffee Selection
November's coffee origin comes from a farm in Santa Bárbara, Colombia. The farm is owned by the Echavarria Family and is located on a mountainside with altitudes ranging between 1650 to 1950 metres above sea level. This location and topography provide an environment with warm days and cool nights, which as we discussed, produces slower cherry growth often resulting in amazing coffee beans. This coffee is of the Chiroso Varietal, which is new to us and the reason we selected it. Our supplier describes it as emblematic of the "sweet, smooth, and bright profiles" that we can expect from this varietal.

I Thought Your Coffee was Arabica, What is Chiroso?
As we've explained in past issues, varietals are sub-species of Coffea Arabica. These include Caturra, Typica, Bourbon, Catuai and Geisha among others. Chiroso is a varietal of Coffea Arabica that is in the Caturra lineage. Chiroso has a relatively elongated oval shaped bean compared to other Caturra varietals. It is especially suited to be highly productive in cool climates at high elevations. Its natural traits make it an ideal candidate for cultivation in Colombia and potentially many high elevation origins. While it is relatively new to the scene, it is already being touted for its clean cup and distinctive tasting notes.  So is the Chiroso Varietal one to look out for? Roaster’s Notes:
This month's coffee was roasted to a light-medium level so we can actually Cup this new (to us) Varietal. As a Colombian Natural process we have come to expect certain flavour notes as well as a consistent roast progression. This Colombian origin did not disappoint in either characteristic. It can take a good initial charge, is boisterous in first crack and rolls smoothly into second crack finishing as a beautifully even roast.  

While cupping look for an Exotic Kiwi taste with hints of Watermelon rind followed by …wait a minute, if you want cupping notes Go Cup Yourself!
