November 2020 Subscriptions Are In The Mail!

If you recognise the city skyline in this month's blog post, you are either extremely well travelled, from the actual city or versed in geography. If not, you are not alone (I had to look it up myself). Pictured is Tegucigalpa, the capital city of Honduras, this month's origin country.

While we order this origin coffee yearly, this particular bag is hard to keep in stock. From the moment our regulars learn we've gotten our hands on it, it's a race to try and order more. This particular coffee is from a Grower's Cooperative known as COMSA.  COMSA is a collective af growers in Marcala, La Paz that uses some of its proceeds to support local initiatives like schools, building projects and community initiatives. Their list of certifications is as impressive as are their coffees, hence this month's selection:

Elevation: 4000 feet
Certifications: Organic, Fair Trade, Strictly High Grown
Varietals: Bourbon, Typica, Catuai, Caturra
Milling Process: Natural
Drying Process: Patio Sun Dried

Roaster's Notes:
Even Green, this beautiful Honduran offering has a nose of fruit and berries.  The roast moves smoothly into first crack and evens out nicely as first crack finishes. The best flavour profile was achieved with a Light Viennese Roast (a few seconds into second crack). If you want to know the more about this coffee, why don't you Go Cup Yourself!
