February 2021 - Let's Cup a Fully Washed Coffee

Welcome to February’s coffee offering fellow Cuppers!

As discussed in January, this month’s coffee was on our radar for some time. It would have been in January’s cup if the Wenago hadn’t surprised us. This month’s coffee is a bit of a change from our previous offerings. It’s Origin is Colombia, not all that interesting, on its own. What makes this month’s offering interesting, is that it is Fully Washed, instead of a Natural Processed (the process we had selected for the previous offerings). Its tasting notes are subtle yet beautiful when you experience them. This month's coffee is well balanced and could easily be used as an everyday coffee that your guests would enjoy.

Roaster’s Notes:
This Fully Washed Colombian seems to enjoy the heat. It takes a moment to come though first crack and coasts its way into second crack smoothly and evenly. The most enjoyable flavour profile (in our opinion) was at a medium roast. We tried several lighter roasts including a slightly under roasted attempt in which the offering came across as a bit “grassy”. As with many of the coffees we’ve cupped together, the overall balance is improved once second crack has begun. At a medium roast and even into dark roast, this coffee is accessible and could be a favourite for everyday drinking.
